Ribs

St. Louis-cut pork spareribs dry rubbed with our BigMan rib blend and smoked to tender, juicy perfection. These can be cut or packed as full racks.

Pulled Pork

Bone-in pork butt is coated in house dry rub and injected with a secret flavor booster before being slow smoked for a minimum of 10 hours. Hand-pulled fresh to order and finished with our Eastern Carolina-inspired house hot vinegar.

Chicken Quarters

Plump, Juicy Chicken quarters, Brined and then rubbed with our special chicken blend and cooked over fire in our chicken cooker until crispy and fall off the bone tender. Then we separate the drumsticks and cut the thighs into portions. This is a crowd favorite at our pop ups.

Texas Smoked Turkey Breast

Farm raised and sourced locally, plump juicy Turkey Breasts are rubbed generously with our coarse pepper heavy salt and spice blend, smoked with our Hickory and Pecan wood in our smoker and then wrapped and finished to yield the most tender, juicy product. This is one of ou crowd favorites. Unfortunately sourcing Turkey can become diffiicult at certain times of the year since we ONLY source farmraised, never frozen product and prices can vary

Sausage

Our house special is freshly ground, seasoned, and stuffed in-house. This is a kielbasa with Jalapeno and Cheese sausage, smoked to perfection. These links are a favorite at our parties and pop-ups.

Chicken Thighs

We start with the highest quality farm-raised chicken, bone-in, skin-on chicken thighs are dry-rubbed and smoked to perfection. We finish with a few applications of our in-house mop sauce that gives it and thin coat and a wonderful tangy finish. Basted with our signature BBQ sauce throughout the cook.

Texas Style Smoked Brisket

Smoked brisket is the inspiration behind BigMan BBQ, and we have been perfecting it for over 15 years serving our guests and on the competition circuit. We believe ours is as good as any brisket in Central Texas. We start with a USDA Prime brisket, then our rub, a Texas Inspired blend with salt, plenty of black pepper, and a few seasonings to bring out the best in beef flavor. Our brisket rub contains no sugar. Briskets are sold whole, by the pound average cooked weight is 8-12 pounds. On the Average, a 10 lb. brisket will serve approximately 20-25 guests. (We suggest getting the brisket whole and we could provide instructions on how to carve. If this is a catered event, we will carve to order.)

These are our very special blend of BBQ beans mixed with red and white kidney beans, s

Cole Slaw

Our house slaw was designed to be a fresh, tangy complement to our rich BBQ. Confetti cabbage and carrots tossed lightly in an apple cider and Dijon vinaigrette.

Mac 'N Cheese

Just delicious classic ooey, gooey golden mac and cheese, cooked to perfection and given a nice cook in the smoker for that added layer of flavor that goes perfect with the sharp cheddar and other cheeses in this recipe

On-Site Backyard BBQ Party Per Person Pricing

Our Backyard party package is sure to make your event the most memorable of experiences. Your guests will be talking about the food and the experience for years to come. One of our smokers will come onsite and cook the food and interact with your guests as they see and smell all that tender juicy, smoky goodness being prepared before their eyes. In addition to preparing and cooking our Pitmaster will slice up and serve your guests as well.

Pricing

Base cost per person: $50 (minimum 60 guests). Guest count calculated to nearest 10 - 60,70,100 etc.

Additions

Add an extra meat: $10 per guest (Brisket $15/guest)

Hamburgers and Hot Dogs: $15/Guest
We bring best quality 80/20 Burger Mix and Smoke our burgers for one of the most memorable burger experiences. As for our Hot Dogs, we have been told they are legendary and we should go and open a hot dog stand so they can get them all year long!

Add an extra side: $5 per guest

Add a half tray or full tray of Sausage, pork belly, or ribs as an appetizer to your party of 60 or more and enjoy a $10 discount off the menu price for full trays or a $5 discount on half trays.

How Per Person Pricing is Calculated

Our pricing is based on a formula of one-pound cooked meat serving 2.5 guests. Average cooked meat yield rate of 50% from raw weight. Example: If a party has 100 people, we will start with no less than 80 pounds of raw meat to serve no less than 40 pounds of cooked meat. While others may not be comfortable sharing this formula, we believe that accuracy and transparency allow us to control our costs and to offer the most competitive pricing possible while ensuring that we meet our clients’ expectations.
